The Lobster Pot is made up of two family-run seafood restaurants, in Nottingham and Beeston, founded by us, the Pongsawang family, after we moved from Bangkok, Thailand, to England in 1991. The first Lobster Pot was opened in Nottingham by Wat, my father, and initially served English seafood dishes. Over time, we began to infuse the dishes with more Thai spices and flavours and the combinations were a hit.
