Paysanne was opened in 1988 by my parents, Bob & Barbara Ross. Mum was a devotee of Elizabeth David and her love of simple, provincial French cookery. While she presented her dishes to the good people of North Wales, Dad kept their glasses topped up with wines sourced directly from small independent French vineyards. They retired to live in South West France in 2003, from where they still regularly dispatch their latest bottled discoveries. After 27 years, we have shaken things up a little. With our chef of eight years, David Hughes, we have started serving Sunday lunch for the first time. We’re also allowing you the chance to start the weekend early with our new Friday lunch menu.
